Blue Soup

Try this rich, delicious soup made of Cauliflower, Broccoli, Blue cheese and Biltong!
* I got this recipe from my sister - note: it's not all my own :)

Ingredients:
for 5 people - big serving

1. 1.5 l Chicken stock
2. 1 big tsp crushed garlic
3. 2 Big onions - cut into pieces
4. 2-3 Big potatoes - cut into Cubes
5. 1kg Broccoli and Cauliflower
6. Blue cheese -+ 150 gr
7. Black Pepper
8. 200 gr sliced and diced Biltong.
9. little bit o' Cream - optional
10. SAlt
11. Almond flakes

How to:

1. Brown onions in olive oil - add the Garlic
2. Add Chicken stock and Potatoes. Boil until cubes are soft.
3. Add Cauliflower and Broccoli - cook until soft.
4. Take one of those mixer blender things and blend until smooth.
3. Place over low heat - Add blue cheese and stir until it has melted.
4. Add biltong
5. Add black pepper and salt to taste.
6. Roast some almonds in a pan to sprinkle over when serving.
7. You can add a spoon o' Cream to each bowl when served.

Beef Noodle Soup

Beef Noodle Soup - hearty, but light - perfect to shake of the winter pounds!

My husband went for a gastroscopy, and we found he has a Hiatus Hernia. We've decided to change his diet to lighter, more frequent meals.
We are eating a lot of soups and salads at the moment and I would like to share these easy, delicious recipes with you. He is not allowed to eat to much spice, curry, garlic and wild herbs...but I've put them in the recipes for you....its just better that way....

Soup for 2:
Preparation time: preparation and cooking +-20 min.

Ingredients:

1. 3 cups (750 ml) of Beef Stock
2. 1-2 cloves of garlic, crushed OR half a tea-spoon of pre-crushed garlic
3. half a teaspoon of mild crushed chillies
4. a Small bunch of spring onions, about 5, chopped finely.
5. 1-2 leeks, depending on size, chopped finely
6. a quarter broccoli head, only cut flowers into tiny pieces, not the stems.
7. 4 mini corns, cut into pieces
8. 250 gr tenderized steak/minute steaks, cut into strips
9. one hand uncooked noodles - whatever you fancy, glass noodles...thick noodles or No noodles
10. Ground black pepper and salt to taste.
11. Ground Coriander seeds - powder
12. Small bunch of fresh Coriander/Dhania, about 5 stems with leaves - chop it...
13. 1 stem of Celery...yes, chopped
14. Little bit of Mild Curry powder.
15. 1 lemon

* Try to use natural sea salt flakes in all your cooking. It is a bit more expensive...but much more healthy.

Bring water/stock to the boil. Add garlic, chillies, spring onions, leeks, broccoli, corns. Taste water for beefy taste....if necessary, add stock powder to enhance flavour. Let it cook while you do the rest of the preparation. It does not need to be cooked for long...just until the corn is done.

Sprinkle beef with curry powder, lemon, pepper, coriander powder and salt. Sear Beef strips in a little butter/oil, you can even ad a few drops of water to use less butter. Take of heat. Do not add to soup yet - the meat will get tough if cooked.

You can either cook your noodles/pasta separately OR add them to the soup 10 min before serving. If they cook to long/stay in the soup...it will gets soggy, and that's frowned upon :). I cook my noodles separately and then just add it to each bowl of soup when I dish.

Add the chopped Coriander and Celery 3 min before you serve - you want the flavour to be released, but you do not want it to get lost...so do not let it boil for to long.

Add beef strips and noodles.

Eat. Enjoy.

Interesting facts about Coriander:

This WONDERFUL, annual herb is easy to grow but do not plant it next to your fennel.
The seed, stems, leaves AND flowers are all edible.
Not only is it a must in curries, but delicious in salads, soups and much more!
Coriander also has medicinal uses - it eases flatulence, tea/soup helps for rheumatism and arthritis and by the seeds/flowers help for a garlic breath.

Bean Stew/Soup

Bean Stew/Soup

This one is reaaallly delicious! Its a must try! And let me know what you think!!

You can either make a stew/soup, depending on the amount of fluid you want to use....the more fluid...add extra salt and flavouring.
It is SUPER high in Protein...and good for active people who wants some muscle!

Ingredients: For 4-5 People

1. +- 800g boneless beef....(if you want it more meaty...why not? If you are veggi freak...just leave out the meat.)
2. 2 Big Onions...any colour, I prefer Brown or Red.
3. 1 Lovely bunch of Spring onions - Cut into little sircles :)
4. 500 gr Mixed beans - I use Barlotti Beans, Red Kidney Beans, Chick Peas, Cannelini Beans. You can also use Lentils (Then its Lentil Stew) If you want to take the short route, just buy 'n can...
5. 1-2 Big patatoes cut into small cubes.
6. 2 BIG gloves of Garlic
7. Brown onion stock/Beef stock.
8. Salt and Pepper
9. 250 ml Sour Cream (Optional)
10. Little bit o' Soy sauce.
11. Butter/Frying oil
12. Some ground Coriander seeds
13. 1 Beer/WAter

...I think that's everything.

Lets start:

1. Get a pot that's big enough...
Add a Little butter/oil - (NOTE: DO NOT FRY with VIRGIN olive oil - its unhealthy! Try Grapeseed/Coconut oil. I use a little Butter.). Add HALF of the Onions, HALF of the Spring Onions and the Garlic. Fry until light brown.
2. Add the meat. Fry until the meat is brown. Sprinkle some Soy sauce and Coriander over the meat.
3. Add 2 Ts of Beef/Onion Stock (If in Powder form)/1 cubes.
4. Add the Beer/Water. If you want a stew/thick soup just ad beer...and if necessary a little water. If you want to make a soup, add 1l of Water and a little extra stock.
5. Add the potatoes. The Potatoes must cook away - to thicken the stew/soup.
6. Add the beans and the REST of the onions and spring onions.
7. Let it simmer for about 2 hours...stirring every now and then, check that there is enough fluid.
8. Add salt and pepper to your taste
9. If you want to use Sour Cream, add before you serve....yummy!

Serve with love and some nice home made bread :)
